Recipe for a french kitchen : artichoke with vinaigrette

The best season to eat this vegetable runs from May to November, for the one produced next to your door, in small Britain.

Artichoke : camus de Bretagne


To choose a beautiful artichoke, a Breton one, le camus de Bretagne (green globe for US)… You have to recognize it : it is not the same as the mediterranean one, it is bigger (2 to 3 heads for a kilo). Then for a good one, you need to check the stem : it has to be fresh (not dry).

To cook it : you need to use two different boiling water

The first one is to wash it (the acidity will go), boil for 5 minutes and don’t cover. The water will be green.
The second is to cook it. Depending on the size of the vegetable, cook betwenn 15 to 30 minutes in boiling water. To know if it is cooked, remove a leaf and if it is tender, you can strain and wait till it is cold.

Recipe for french dressing :
3 tablespoons oil
1 of vinegar
a large teaspoon of french mustard.

Eat the leaves one by one dipped in french dressing. Savour the heart once you removed the inedible “choke”. You can also peel the stem and eat the tender center.
Be careful you have once cooked to eat it during the day because the artichoke oxidizes quickly.

You can do it salty or sweet… It is an easy recipe, nice to do with children.
Several ways can be done : vegetarian with vegetables thinly sliced, with crumbs of tuna fish or sweet with fruits.

Ingredients :
50 g flour
2 yolks and 2 whites
150 ml milk
25 g melted butter
A large pan

Mix the ingredients. Add the whites softly.
Slice thinly your vegetables. Add them with a bit grated cheese.
Pour into a frying pan. 10 minutes for each side.
Eat it with a green salad.

The sweet recipe

Add 25 g of sugar to your dough. Slice thinly the fruits.
Add them. Same cooking time.

Healthy diet with a seasonal calendar of fruits and vegetables in summer

It's summer ... the best season to enjoy veggies and fruits ... because they're plenty...because the fruits are sweet and juicy... And because you can prepare nice cold salad with so many different kinds of products.... because it's the best diet... to loose weight (Vegetables and fruits are low in calories) or to feel fit and healthy... Natural vitamins for a beautiful complexion and a nice skin. The best time to eat fresh food.

You can still eat Beets, Carrots, Celery, Potatoes and Onions as they can be preserved all year long but try to enjoy some other ones...
As the weather is nice and warm, enjoy eating cold... outside...

You can also enjoy collecting what you would like to eat by going to farms where you can pick what you want to eat and savour... In Brittany, it's possible, in many places...

You can also when walking around, collect blackberries, sloes and other nuts and chestnuts ....

Remember that exotic fruits do not grow all year long....

Salted crumble with a French ratatouille

2 differents steps... Ratatouille is easy to make but needs time to be good.

1 – Ratatouille with summer vegetables
In summer, the ideal is to make a French ratatouille. The secret is to cook it a long time. Better to make a big one that you can freeze.The recipe is for 8 people.

Ingredients for 8 people 2 garlic cloves
An onion
2 peppers
2 eggplants
5 zucchini
8-9 tomatoes
Olive oil
Garlic in olive oil for 5 minutes. Peel the onion and add to garlic (15 minutes).While the onion and garlic cook. cut into small pieces peppers. Add and cok fr 15 minutes. Continue with the other vegetables (15 minutes each). Then cook over low heat for one hour (no cover). Let cool a few hours and again cook for an hour. It's done

2 - Crumble
Ingredients for 4
100g flour
50g butter
50g Grated Parmesan
Cut butter into small pieces and add to flour and grated Parmesan. Mix until small balls. Pour the ratatouille into a baking dish. Add the crumble top. Oven for 20 minutes to 7.
This winter you can do the same thing with carrots, leeks, potatoes and mushrooms ... Or any other vegetable that you will cook in the oven before proceeding.

Spring calendar for fruits and vegetables

Spring time... Nature is waking up.... And you too.
There are so many reasons to enjoy fruits and vegetables in spring...Good vitamins and diversity of taste are back... Nicer and longer days too. Prepare your skin (fresh veggies and fruits are the best diet to have a wonderful complexion) and your body for the sunny days... and loose quietly the overweight of the wintertime.

Spring is the best excuse to go back to a nice healthy diet to be fit and nice looking for the -soon- sunny beaches... Cold is gone and it is easier to eat light....

Specially because the spring vegetables and fruits mature without being helped and that's much better for our palates, our health, our body and our wallet ...

The common Beets, Carrots, Celery, Potatoes and Onions are still around as they are the basis, edible during the whole months of the year...

We do often forget that green salads are also related to the seasons ... The lettuce starts to appear on the shelves in April ... while the winter salad (chicory for example) disappears ...

Remember that exotic fruits don't grow all year long...

Eating fruits and vegetables in Autumn : 5 a day at the right time

Have you heard about the Copenhagen Summit... Of course... States and men have to act together to change the habbits we have for years...

Recipe for rose hips jam and rose hips syrup

It took me some time to peel the rose hips but here I am with those high concentrated vitamin fruits !!! I’ve done two different recipes with them : jam and syrup.

Rose hips


The more difficult in the recipe is to peel the rose hips. You have two different ways to do it : for the lazy ones (read 1), for the meticulous ones (read 2).

Ingredients :
Rose hips
Sugar

To take away the itching powder, you need time and you can either :

1 – Put the rose hips through a colander and save the pulp.

Or

2 – Cut the rose hips in two pieces and take out the fine hairs with a knife. I know it is quite long…

Once you’ve done that, it’s easy.
Add to the pulp sugar (400 g rose hips, 200g sugar) and boil till you have a nice thick orange mixture.

Put in jars.

The recipe of the syrup now…

I would say it is an homemade medicine for sore throat : it has no chemicals and plenty of Vitamin C (you remember that rose hips have 20 times more vitamin C than lemon and when you catch a cold you have a vitamin C deficiency) and honey (everybody knows that honey is good for sore throat).

You have to use 65g of fruits for 35 of honey. The savour of honey is stronger than the rose hips (but they are the benefits of the vitamin C). Anyway it is good for your health…

Recipe for pancakes with elderberry flowers

Want to eat unusual pancakes… with a spring flavour…

The elderberry flower will give a very light sweetness to the crêpes. And hurry… the season of flowers elderberry flies (a good month of May and June).

You need two to three large clusters of flowers to put in the dough.

Ingredients
250 g flour
250 ml of beer (the same amount of flour)
500 ml of milk (the double )
4 eggs
Salt
Some alcohol of your choice
Mix everything and let it rest a bit.
Add the flowers in batter. Heat the pan. With some oil on a tissue, grease the pan each time you make a crêpe. Pour a ladle of batter. When the edges turm brown, turn it. Let cook a minute.

Place on a plate, sprinkle with sugar (which will melt with heat) and add so on your pancakes. Eat them when they are cold (the flavour of flower is light, when eaten warm, it does not taste as much !).

Home made hot-water bottle or cold-water bottle in cherry stones

Cherry season ... goes by so quickly. The white flowers become beautiful red berries. ... And if you're lucky enough eat lots of cherries ... please keep the stones ! They 'll be useful soon...

These small seeds are not only used to grow cherry trees, they are used for many other things ... Such as...hot-water bottles.

Let me explain, one of my friends gave me a pretty hot-water bottle in cherry pits, homemade ... And it can be used warm or cold, it is useful when your body is aching !
Just put in the oven a few minutes and it is ready to be used on your painfull neck ! !
Or cold to relieve tooth pain.
Or the bumps and bruises of your children.

Water bottle in cherry stones


To realize one hot-water bottle, you just need :
Just get your cherry pits (all species of cherry trees are accepted: wild cherries, sour cherries, red cherries, yellow cherries, cherries macerated even for years in brandy). Scald a few minutes (it cleans and kills insects if necessary). Dry in the sun.
Buy a cloth that resists the oven (all good stores specialized in sewing and textiles will tell you what material to choose). Mine is in cotton.
Then think of the framework for your water bottle : you can do what ever you want ...
Cut your framework, sew it in reverse, let just a small hole to fill the seeds (you need 400 grams of stones). Finish sewing. Your water bottle is ready. A cotton one, no plastic or rubber!
Uses

Hot possibility : 10 minutes in the oven around 100 degrees. The hot-water bottle retains heat very long and it fits perfectly on your tummy ache, your sprain, your pain stiff neck or any place that makes you suffer ...

Cold version: a few minutes in your freezer and extractions of molars and wisdom teeth are forgotten.

French recipe of the pissaladiere without anchovies

It is a recipe that tastes good and smells my childhood. A nice mixture between my dad'pissaladiere with my Mum'puff pastry.



A pissaladière with Breton onions... The pissaladière is a type of pizza, a white one without tomato sauce, done with onions on a bread dough. Usually anchovies are also part of this pie.
The way I do it is a bit different : I use Breton onions, the one from Roscoff, called oignons rosés or may be the Johnny'onions.
They are quite good for this onion pie... because they're sweet. Like South European onions. You need to cook them a really long time... I don't use bread dough but puff pastry instead. It's not "the real one" but it is good !

Time: two hours for the onions and cook about 45 minutes for the onions'pie.
Ingredients
2 to 3 kilograms of onions (it has to become pureed)
A little olive oil
Black olives
One to two hours of gentle cooking.
The tart should be well covered with a thick layer of onions ... more than one centimeter ... au moins. At least. Onions reduce very slowly until it becomes very soft, almost like a puree and the colour becomes khaki brown.

Ingredients for the puff pastry (pate feuilletée) to a 30cm pie
wooden spoon
160g flour
half or 80 g butter
1 tablespoon olive oil
a small glass of very cold water
Cut butter into pieces (2cm to 1) in the flour. Pour the oil. Mix. Add water little by little and mix (no fingers but with a wooden spoon) until dough is held (not necessarily very well but it does not matter).
Avoid putting too much water, your dough will be hard. And do not touch the dough with fingers. These are the two secrets to succeed for a pate feuilletée !
Pour your dough on the table and with a rolling pin, spread roughly.
Fold it again and spread...with rolling pin. Repeat this operation 5 to 6 times. Fold one last time and store at least 15 minutes in refrigerator. The more you've folded your dough, the better the puff!
When the time expired, spread the dough and pour over your onions and black olives. For 45 minutes ... Your puff pastry is done.
Enjoy with a green salad.
